This is from Mr. Food's A Little Lighter cookbook.
I usually halve this recipe to make a light meal or heavy snack.
4 8" flour tortillas (use wheat to make it healthier, or low carb, or gluten-free - there are so many choices now!)
nonstick vegetable spray (Pam)
1 Cup salsa
1 Can (16 oz.) black beans, rinsed and drained
1 Cup (4 oz.) shredded cheddar cheese (you can make this lighter by making half of it reduced-fat cheese or use vegan cheese)
Preheat the oven to 350 degrees. Spray both sides of the tortillas lightly with Pam and place on a rimmed baking sheet. Bake for 10-12 minutes, or until crisp, turning once halfway through the baking (be careful not to burn). Remove from the oven and layer evenly with the salsa, beans, and cheese. Return to the oven and bake for 5 min. or until the cheese is melted and the bears are hot. Cut each into 4 wedges and serve.
These are DELICIOUS!!! They're kind of like pizza-nachos.
They're not gluten free unless you use gluten free tortillas; They're not low carb, but you could substitute shredded meat or hummus for the beans, and use low carb tortillas (as noted above).
