This is super-easy! Heat a pan (I prefer nonstick) on medium-high heat with a few sprays of Pam in it. Use your chopped vegys--fill the pan with as many as you like, and that way they are cooked ahead of time, so it makes it easier for you the next time.
You can add chicken or beef, too. Add your favorite seasonings such as garlic, salt, pepper, cilantro, soy sauce, honey, hot sauce, shredded cheese or some pre-bottled spice mix.
Serve with brown rice or just plain.
This is gluten free and easy to make low carb.
