This is similar to satay sauce used in Thai restaurants. I forgot where I got this recipe online. I've changed it a bit. This is good as a salad dressing or dip, with veggies or meat.
1 Cup creamy peanut butter
1/2 Cup lime or lemon juice
2 T. soy sauce
Your favorite sweetener to taste (I use Splenda)
Mix all in a food processor. Add warm water until it becomes the consistency you like.
Not nut-free. It's dairy-free, and gluten free if you use GF soy sauce. It's not too low carb. You could use Sunbutter instead of peanut butter to make it low carb.
