A Word About Veggies

I have never been a big fan of veggies, but I have been trying them in different ways, so I can eat them more; they're great for your health and for losing weight.

I chopped the veggies up into small pieces, and that makes it a lot easier to mix them in stir-fry, put them in salads, etc.  It is really easy with a food processor!  Just cut the veggies into fist-sized chunks before putting them into the food processor.

I usually buy the veggies on Sunday and then chop them up; that way they are easy to use during the week, stored in handy containers.

  • Purple cabbage--if you have a family, it's great, but for one or two people you only really need half the cabbage...unfortunately, they only sell them in whole sizes.  Core the cabbage (cut out the middle part) and just use the outer purple parts. However, you can buy bags of "cole slaw," which includes green and purple cabbage.
  • Green, yellow, orange, and red bell peppers -- make sure to take out the top stem and the seeds.
  • Brussel sprouts--these are really like mini-green cabbages; who knew?  Just take out the middle core and slice up the rest.
  • Carrots--peeled or not; wash them if you aren't going to peel them.  Just cut off the tops and chop into chunks for the food processor.
  • Broccoli--just use the heads and chop them into small chunks; eat the stems, too, if you like them.
  • Onions--a little raw onion goes a long way; it's easy to chop in the processor and won't make you cry
  • Peas--Snow peas, sugar snap peas, whatever you call them....if you can find fresh ones, they are ten times better.
  • Zucchini --- green, yellow... any kind of squash will work.
  • Tomatoes are good, too, but I wouldn't chop them ahead of time as they become mushy.

You can use almost any veggie you can think of this way. 

Veggies are gluten free, dairy free, and generally low carb. Some diabetics have trouble with broccoli, onion, carrots and others.

If you like soups, salads, stir-fries, scrambled eggs, casseroles, etc. you can add veggies to them. You can add them in most dishes with multiple savory ingredients. They can be good in smoothies, too.
