I made these. and they were delish! They turned out way better than the store-bought soy or
veggie burgers.
I mixed various uncooked veggies I had on hand in the food processor until they
were finely chopped-spinach, carrots, zucchini, and green onion. You could
probably use any veggies for this. A blender should work just as well as a food
processor. If you don't have either, I'm not sure if it would work as well if
you tried chopping them finely. They would have to be pretty fine. I suppose you
could cook the veggies a little first, and then mash them up...
I mixed the veggies with 1 lb. of ground turkey. I did not measure, but I would
say you probably want more turkey than veggies because they are very moist and
tend to fall apart. You could also add some egg and/or bread crumbs to help them
stay together better. Freezing them ahead of time helps. I added some Italian
herbs, and garlic, and salt and pepper, and some barbecue sauce (you can use low
carb bbq sauce or gluten free bread crumbs or even leave the sauce out).
I heated up some olive oil to fry them in. You can use any oil. You want the oil
to be very hot (you can turn it down if it spatters) and only turn the burger
once. You want it to be fairly brown on each side. Turning them more often will
also make them tend to fall apart. Make the burgers fairly large as they do
shrink.
They came out really good. I don't put them on bread, since I'm allergic, but
they taste fine on bread. I also melted cheese on it and put a little dab of
ketchup, mayo and mustard on it. Both my husband and MIL liked them, and they are
very picky.
You could also use cooked soy or any beans instead of the turkey.
This recipe seems pretty fool proof! It's a good way to get more veggies in your
diet.
It's also both gluten free and low carb! Use vegan cheese to make it dairy-free.
