Rosalys' Meat Loaf

 This is my dear, departed mother-in-law's recipe. She was a wonderful person, mother and teacher.  She wasn't known for being a great cook, but this is one of her best recipes. A lot of people make the recipes THEY like, the way they like them, so that influences their cooking and baking. She knew exactly what she liked.

Simmer one large carrot, in small cubes, in 1/2 Cup water 15-20 minutes.

Combine 2 lbs. ground beef, 1 Cup toast crumbs, 1/2 C. water 1 T. parsley, 1/4 t. thyme, 1/4 t. nutmeg, salt and pepper to taste, in a mixing bowl.

Sauté 1 finely chopped onion and 1 mashed clove garlic in 2 T. butter. Add to the carrots with the water they boiled and add rest of ingredients.

Knead together until light and springy. Add more water if necessary. Bake uncovered in loaf pan at 350 degrees for an hour or so.

This is an egg-free, tomato-free recipe. You can make it gluten free by using gluten free bread for the toast crumbs.
