I love these! They are not gluten-free or low carb.
1 1/4 C. flour
1/2 C. sugar
1/2 C. butter
2 eggs
1/2 C. firmly packed brown sugar
1 tsp. vanilla
1/2 tsp. baking soda
1 C. chopped walnuts
1 C. raisins
1/2 C. flaked coconut
Heat oven to 350 degrees Fahrenheit. Lightly grease an 8-inch square pan.
Combine flour and sugar. Using pastry blender or fork, cut in butter until
mixture resembles fine meal. Press into greased pan. Bake for 20 minutes or just
until edges are lightly golden.
Meanwhile, combine eggs, brown sugar and vanilla; beat well. Stir in baking
soda, walnuts, raisins and coconut. Spoon over hot crust; spread to cover
evenly. Return to oven; bake an additional 20-25 minutes or until top is set.
Cool completely. Cut into bars.
I tried making these with gluten free flours, and they didn't come out all that well. I might try again, though. Also, they are definitely not low carb, with the raisins and coconut. However, you could use unsweetened coconut and unsweetened dried cranberries.
These are great for Christmas.
